Just arrived from the Philippines - limited supply. Wild (none farmed), fish caught in the Sulu Sea between the Philippines and Palawan. Cleaned and 'butterfly cut', then sun dried within hours for freshness and taste. Bisogo or, Threadfin Bream in English, make an ideal breakfast with fried rice or a Spicy Vinegar Dip. The skin can be eaten and is very delicious when cooked crispy. (Hint:- after frying the fish, try frying some tomatoes in the fat to go with the fish. The natural sea salt from the fish enhances the tomatoes flavor.
